Cave man for a day

Today we donned our best leopard tees and ugly plastic teeth in celebration of my baby girls birthday.

We ate jumbo chicken, giant potato fries, along with yummy (+ healthy) cucumber, bananas and mangos. After our full sized meal we put in our fake teeth and headed out to see “the croods

There have been so many great kids movies lately, but this one topped the charts. Intense, gripping, thrilling, exciting … I even survived the tear-jerking “i love you too” moments.

We returned home and stuffed our faces with the gluten-free banana + chocolate chip cake, smothered in cocoa-cream cheese icing. First year if the ten that the cake was both edible and visually appealing – yeah me!

Wish I had photos from previous birthday cuz those cakes were funny (now that the moment has passed that is) … Burnt, flat, melted, blue teeth-staining icing.. one year the kids didn’t even EAT it. But finally I’ve got this baking thing in track. Basically, the more you do something, the better you get.

Then came the gift opening – Lego, jewelry and monster high. Plus some even MADE her the funniest cards. I’m so glad she has friends with her same weird sense if humor. And good kids too.

But now we are all completely exhausted and ready for a 4:30 nap – like tea time for the modern parent.

Yummy in my tummy, butterfinger protein bars

The last time I made protein cookies they were not eaten by my family.. too bland for them. So tonight I attempted a different recipe – peanut butter, honey + cocoa bars that taste like butterfingers.

The original creator said she altered the cookbook recipe to make it healthier, replacing corn syrup and sugar with honey, and chocolate icing with cocoa and coconut oil. All brilliant.

But the icing… She suggested adding stevia to taste. I didn’t have any so I had to break the healthy rule and use icing sugar. The worst of the worst, I know. But even then, it made such a small amount that only half the tray is “bad” lol

I can cook! Slightly healthy chocolate mudpies

I found this recipe for healthy chocolate + banana mudpies by way of my unfortunate pinterest obsession … but after mixing all the ingredients (bananas, applesauce, peanut butter, cocoa) I was concerned they were too bland to interest anyone in this house. Rather than toss the mix, and waste food, I was going to attempt a revamp of the recipe… But I’ve never been successful in doing this before so I was a little skeptical.

I remembered, as a kid, my mom made the best chocolate mudpies… using about 15 bags of chocolate! No. I’m exaggerating. It was just a box of bakers chocolate 🙂 but they were amazing. I would still hove anything to eat a whole Tupperware full today. On occassion, mom had me help, probably so I could make them myself one day, but sadly, all I recall is the chocolate melting part. Luck have it, today that’s all I need.

Baking is still rather new to me so I had to improvise on both my ingredients and the tools. I knew to gently melt chocolate I had to heat the chips slowly or they would burn and dry up. I placed my glass measuring cup inside a pot of water on the stove at the lowest setting (saw mom do this once) and I tossed in about 1 1/2 cups of milk chocolate chips.

As they melted I added about 1/4 cup cream cheese (i would have used milk, but I forgot to buy some). It was looking a little dry, especially since I needed to add this to the original mix, so I added a few spoonfuls of unsweetened applesauce … and it was magic. Amazing melty chocolate magic. I poured it over the original mixture, and stired with all my might. Here I followed the recipe once again, baking them at 350 for 10 min.

And I’m a genius!! they are delicious!

Not sure where they sit on the health scale, thanks to the addition of the chocolate chips and cream cheese, but the original healthy bits ARE still in there.

And that’s got to count for something, right?!

UPDATE: just dawned on me coconut oil may have been better than the cream cheese – definitely healthier! Oh well. Next time.

When u boil an egg too long

… This happens. At least there was still water in the pot, and the whole egg didn’t explode, because I have experienced that mess before… But this also means I STILL can’t boil an egg. I am not an awful cook, I swear. I don’t burn things (anymore), and finally my daughter has no concerns eating whatever I cook or bake… This egg thing is just my flaw. That one thing I just can’t do. … And because it’s so hard to believe, I blame THE POT!

Better results than I expected

Whether it’s my occasional 40 min workout 2 or 3 times a week, eating less bad foods or the fact I am walking more to save gas, But yesterday I put on my favorite skirt that I fell in desperately in love with (and bought even though it was too small) .. And it fit. In fact it was loose. Well hooray, but then the same thing happened when I pulled on my favorite comfy work pants and I will likely spend the rest of today trying to make sure they don’t fall off my butt.

I am thrilled. Really I am.. but I was also really happy with the pants I owned. I liked them. Somehow I didn’t think i was going to lose so much in my hips + butt that I would actually go down a size. I just wanted to tone things up, but apparently I was carrying a lot more flub than I realized.

So high five to the Jillian Michaels workout videos!! And I suggest if your trying to lose any amount of weight they are the best as she changes the moves often enough to keep you interested, and they are all multi-movement, meaning not just arms or legs,.but both ay the same time…. Working more areas to burn more fat in less time – my kind of activity. Over + done.

… BUT my awesome (in the true meaning) psoriasis nail issue is NOT getting better. I am trying to cure from the inside out because I refuse to let the doctor remove my fingernails to better administer the healing cream. I eat eggs, spinach and as many vitamin A containing foods that I can, and I get as much sun as possible after work with at least 6 hours on the weekends – and it seems to be getting worse. Time to research a stronger cure…
